Nope, no lamb. Whew. However, I did have chicken and it was yummy. Normally, I'm not a big big fan of cream sauces unless they're a tomato cream sauce. However, when I popped into the grocery store the other day, something possessed me and I grabbed a package of alfredo sauce mix. Tonight, since it's Sunday, I figured I should actually cook something. It was a good idea.

Start by saute-ing 2 cubed chicken breasts with a smidge of olive oil, fresh garlic, and some chili pepper flakes. Throw in a dash of oregano and basil. When almost cooked, add a diced red pepper, diced onion and a generous helping of frozen broccoli bits (I love me some stems).




As that's finishing up, whip up the alfredo sauce. I have discovered, through experience, that sauce mixes are pretty bland (although they're a good starting point). Therefore, get ready to spice it up! Instead of 2% or 1% milk as the package calls for, I used half and half cream. Nice and thick. I also added a clove of minced fresh garlic and some more chili pepper flakes. Mmmmm. Cook as per directions on package.

Pour thickened sauce over veggies and chicken. Let sit (and thicken!) while you cook the pasta. Serve topped with fresh parmesan (I only had that processed crap) and fresh cracked pepper. Oh my goodness! It was delicious. However, I should mention that serving this yummy mixture over whole wheat penne is not a wise choice. It definately screams out for fettucini (which I normally don't by). My sauce thickened up so much, I could have eaten it all on it's own. Hmmm, that's an idea for next time - add more veggies and skip the pasta altogether...

Sorry for the yellowiness of the pictures. It was a combination of a stupid camera (ie: the operator of...) and the light in the stove's hood. Trust me, in person it looked almost too good to eat. Almost.

I always buy whole wheat pasta too (well whole wheat everything) and much prefer it to the white stuff.

That sounds like a lovely sauce, but... whole wheat pasta?! Why, in the name of all that is holy... WHY?!?

If you can find it in Canada, you should buy a brand called DeCecco (comes in a blue and yellow bag). It's the best pasta on the market... dee-lish!
