When I used to work on the university campus, I would occasionally pop into Roots Organic Market and grab lunch. They had a fantastic restaurant/food court area where you could get amazing healthy lunches. They're salad bar? Top notch. One of my favourite items was a beet salad they offered occasionally with walnuts, crumbled feta and some sort of vinagrette that was out of this world. It's been almost 3 years since I last had it so I figured I'd try to make it myself (minus the walnuts thanks to a sensitivity to nuts). They also offered incredible spelt breadsticks with sea salt.... I might have to make a trip to the south side.

First step, I roasted some beets, let them cool, peeled the skins off and diced them. Then, I decided to go with a dijon vinagrette I had used previously. Mmmmmm. This time though, I didn't have any of the chili pepper sauce to add to it, so it was simply a mixture of equal parts balsamic vinegar, olive oil, and dijon mustard. Double mmmmm. I added this to the beets and mixed, coating each piece. Then, I crumbled feta cheese over the top. Rounded out the meal with half a pork loin chop and some mashed potatoes which weren't as creamy as I'd hoped. Ah well. The verdict? Yummy but the dish was missing something. Dill perhaps, or green onions may have given it a nice "ummmpf". A great alternative to standard roasted or pickled beets. The picture doesn't make it look very appetizing but the taste more than made up for it.

I adore beets! And while I generally shun canned vegetables, canned whole beets are absolutely superior to cooking the damned messy things yourself.

This sounds pret-ty good. I so wish we had an organic market here! But then I would have to go to work there in order to pay for everything I HAD to have....

Mr. A - pickled beets are the most luscious thing ever...

I ate there last week, was in town overnight...the girl on the shuttle beside me phoned in a take out order from them...and being the nosy guy I am...I had to find out where it was and walked over from my hotel.

This sounds goooood!
I made something like this a few months ago, and roasted some pinenuts to springle on top of the beetroot and feta salad. Delish!
