The Next Recipe Challenge

Howdy folks! Quick blog post for today. October's recipe challenge is the pumpkin bundt cake I had mentioned a while ago (mmm, with cream cheese frosting...). However, I'm already planning ahead for November. What can I say, I'm a Capricorn. Anyways, I thought the Admiral and I might try Mexican food. Something a bit spicey to warm us up as the snow starts to (hopefully) fly. I'm not talking about the crap that most "Mexican" restaurants try and pass off as authentic though, I want something close to the real thing. I have a couple of cookbooks on order with the library but while I'm waiting for those to come in, I thought I'd ask you for your thoughts.

Keep it simple. It is so easy to make your own tortillas. I could send you an unbelievably simple recipe. Then you have warm soft tortillas to fill with all of your favorite stuff. Have those with Mexican rice or more refried beans on the side.
