Sunday is Soupday

Considering the stretch of hot weather we've been experiencing here in Edmonton, I was a bit surprised at myself for getting an urge to make soup this weekend. Sure enough though the desire for a bowl of something warm, filling, and comforting was too overwhelming for me to ignore. I didn't want anything too heavy though so I opted for a simple veggie soup.

First off, I sauteed 2 carrots, a leek, an onion and 2 stalks of celery in a little bit of olive oil and butter. I then added 2 cups of veggie stock and a diced potato, along with a mix of thyme, rosemary, and basil. It simmered for about 10 minutes and then 2 small tomatoes were thrown in (diced, not whole) along with some kale and chili sauce for heat. MMMmmmm. Hit the spot. Plus I only made a small amount this time around so I've got just enough for three bowls - no waste!

One thing I've 'discovered' this year - kale. I really only began to hear about kale in the past 5 years or so as I've been watching things like Food Network and various cooking programs, reading cooking blogs, and the occasional cookbook. My family was never very adventurous when it came to food although we were always encouraged to try new things when offered but one thing we had never been exposed to was kale. I wasn't too keen on it the first time I tried it (in one of my homemade soups) but its starting to grow on me. If you've never tried kale, give it a go. It's extremely nutritious and can be pretty yummy.

sounds like an excellent soup!...sometimes soup is excellent on a hot day, especially if it's spicy
