Breakfasts are a B*tch

I don't know about the rest of you but for me, breakfasts are the most difficult meal of the day.  Don't get me wrong; I have no trouble eating!! That's never a problem, any time of day.  The problem for me is what to eat. 

You see, I get up and before I've even walked the few feet from my bedroom to the bathroom, I'm thinking about eating.  Nothing new there.  But I'm not thinking of healthy homemade granola with soy milk, chia seeds and a sprinkle of flax.  My thoughts are filled with how tasty those leftovers from last night would taste right now.  Mmm, leftover pizza, mashed potatoes, cold pierogies.  All washed down with an ice-cold Coke.  Yeah, breakfast of champions baby.
Monday's Breakfast
I've never been a big "breakfast food" person. Cereal, toast, eggs? Meh. I want a big, hearty, stick to your ribs meal first thing in the morning.  Its taking everything I have as I write this to not go and heat up the leftover pasta I made last night and eat it now rather than saving it for my lunch as originally planned.

Breakfast is the most important meal of the day, or so all the experts constantly tell us.  Why shouldn't I have something more substantial for my first meal and kick my day off with a bang?  Ok, so the pizza and Coke might not be the best choice (sigh, fine...or the pierogies and mashed potatoes), a larger meal first thing in the morning might be just what the health gurus ordered.  Its a question though of ensuring you get all the things you need:  carbs, protein and, of course, VEGGIES!  You'll notice I didn't write dairy in there anywhere - I'm not one of those who claim you have to have dairy to be healthy.  In fact, I think the opposite is true.  Doesn't stop me from cramming my face full of ice cream and cheese whenever the opportunity arises.  Uh oh, shiny object....

Where was I? Oh right, getting all the things you need.  The pasta I made last night (see? I'm convincing myself its a good idea!) fits the bill:  extra lean meat, peppers, onions, spinach, tomatoes, shell-shaped pasta. Mmmm, tasty and nutritious.  Oddly enough, as much as I'm craving it right now, I'm going to pass.  I'll have it for lunch.  Breakfast instead will be more traditionally "breakfasty":  oatmeal with a banana and some dried fruit.  I have a feeling that I'll need that energy boost to make it through the afternoon on my first real full day back at work since Dec 23 (I "worked" the 29 and 30 but I didn't do much both days so it doesn't count).

I generally have leftovers for breakfast as well. But I need to drink coffee for a couple of hours before I eat. Not the healthiest approach!
