Chickpea Cheeseburgers

I've been feeling off for a while now - nothing major, just bleah.  Don't worry, I don't feel ill but I haven't been feeding my body very well.  I made a plan last week to eat better and treat myself better starting this weekend.  A coworker is doing Weight Watchers online and I offered to be a source of support, eating healthier alongside her.  I'm not joining WW again.  We all know I don't have much in terms of willpower but having someone to talk to about cravings, desires, and healthy options will be beneficial to both of us.

For me, I've been chintzy with the veggies over the last while and I'm feeling the side effects.  I know that I've gained back some of the weight that I lost last year.  No scale to tell me the actual numbers but you can feel it.  Its not just the incident with the tight jeans last weekend; its the lack of energy, the return of the desire to just sit on my butt and do nothing, the mental slowness.  Too much crap in my diet once again and not enough of the good green veggie wonderfulness that I enjoy.  So, I'm doing what I can to get in more veggies and healthier foods into my diet. 

Today, I had a big craving for a veggie burger.  Yes, I was craving a VEGGIE burger.  I used to eat Money's Veggie Burgers but I cannot find them at my local grocery store.  When I Google'd them, the first thing that came up was Gardenburger.  The original ones look exactly like the ones I used to get so I was hoping that my store would have them....alas no.  There were the Amy's brand but the two kinds both had walnuts which I can't have.  There were Yves brand burgers but they're just a big old soy patty.  I don't like soy based burgers that replicate real meat (although I did buy some Veggie Patch Chicken Nuggets.  Shut up.).  Alas, it seemed I'd have to make my own....

Enter the Chickpea Cheeseburger:

I used this recipe with a few alterations (naturally).  I ran out of bread crumbs and I don't like cilantro.  Instead of the bread crumbs, I used all purpose flour and skipped the icky cilantro.  I discovered that its not a good idea to try to mash chickpeas with a potato masher...  These were soooo yummy!  I LOVED them!  It helps that I really like chickpeas to begin with but the little zing from the chili powder and cumin were the perfect flavour for these burgers.  If anything, I'd add more next time.  The recipe makes 4 perfect sized patties so I've got dinner tonight (I'm smothering it in Frank's Red Hot for a buffalo burger), lunch tomorrow, and lunch on Monday.

Give these a try the next time you're craving a big fat juicy burger.  Even non vegetarians will love them.

I love chickpea burgers. I generally make them into more of a falafel thing, using a baked potato instead of bread crumbs. Soooo good.

But since I always have bread crumbs around and rarely have baked potatoes, I'm going to try yours.
