V is for Vegetable!

Does anyone else get super excited about their packed lunch? Or look forward to dinner all day long?  OMG, I think I'm obsessed with food.  In a good way though.  Yeah, a good way, sure...

As you know, I've been having "tight pants" issues of late and when I weighed myself yesterday I discovered why.  The scale I used indicated that I'd gained back 10lbs in the past 3 months!  Now, to be fair, the scale is in a gym, probably not balanced or maintained properly.  So, I weighed myself using our old scale when I got home.  This one said I was DOWN 10lbs from the last time I weighed myself.  WTF?  I'm so confused.  I'm pretty sure I've put on a few but ten?  That seems a bit much - I haven't been eating really well but I haven't completely gorged myself on cakes, cookies, chips and Coke.  While I was initially blue about the wonky numbers (especially the first one!), I told myself to buck up and stay strong.  I will only use the scale at my doctor's office or the dietician and I will not become a slave to it.

As I wrote previously, I've been skimpy on my veggie intake and have been trying to up it this week.  I love veggies so this shouldn't be a problem.  However, I also love soda and salt/vinegar potato chips... Hmmm.  Chips.  Sorry!  What was I talking about? Oh yeah, veggies!  Yesterday, I did pretty well, stayed on track, and didn't binge when I got home to soothe my hurt fatgirl feelings.  Today, I'm beyond excited and eagerly looking forward to both lunch and dinner.  Ok, yes, its official - I AM obsessed with food. 

Breakfast today was a big bowl of oatmeal with dried tropical fruit and a splash of cream.  Dinner tonight will be a piece of frozen fish (yay for Capt Highliner), a baked potato and steamed broccoli.  Oh yeah, bring it on.  I'm salivating just writing that!  Its lunch though that I'm the most excited about:  mashed yam, a pound or two of steamed cauliflower (oh how I love thee!) with a little cheez whiz, and Veggie Patch's Chick'n Nuggets.  Lunch will be a bit blah on the colour scale (orange, orangish, and white with orange) but full of yummy yummy yumminess.  Now, I'm not normally a fan of faux meats.  They don't often have a taste and texture resembling anything close to actual meat.  However, I tried Veggie Patch's nuggets a few years ago and was impressed.  The coating is different but the insides resemble McD's chicken mcnuggets both in texture and flavour.  And the best part? No worries about mistreated chickens or the questionable bits that make up a McNugget!

Does anyone else love cauliflower as much as I do?  Steamed, in soup, and (unlike broccoli) I also love it raw!  Bring it on.  I haven't mastered the art of roasting it yet but I'm not giving up.  I describe what it is about cauliflower that I love.  You'd think that considering how gassy it makes me, I'd try to avoid it.  Nope.  And I can't eat just a little bit of it.  A bite or two? Are you mad?  Seriously?  Cauliflower, to me, is the potato chip of the vegetable world.  You can't have just one bite. A typical Karen-sized serving of cauliflower?  About two cups.  It literally takes up half of my plate.
