Winner Winner Chicken Dinner

Sunday dinner this week was one of my favourite way to prepare chicken:  a quick browning and then simmering in a mixture of canned tomatoes, onions, and peppers, with various herbs (mainly oregano, garlic and basil).  Absolutely delicious.  I plated it on a bed of jasmine rice and finished it off with a bit of steamed cauliflower and a smidge of cheez whiz.  And the best part?  I made enough for two more meals!  Mmmmm.
